Traditional dish - Khinkali

Like other historical-ethnographic parts of the mountains of eastern Georgia, khinkali was one of the most important dishes in the Khevi province. Khinkali is prepared as follows: veal or mutton is sliced, prepared with mountain savory and root, salt and pepper, rolled in dough and boiled. In Khevi the meat filling was mainly filled with onions, garlic and cumin. They also knew how to make "khortsovani" here - it was made like khinkali, but instead of boiling it was baked. Shepherds used to make large khinkali, so-called "metskhoruli khinkali". Along with mutton and beef, the Mokhevs also made khinkali with goat meat.
